If there aren't abundant fish in your country, you can use meat or vegetable substitutes for them. Therefore, I think ”sushi” will help your restaurant dishes. I also recommend you come to Japan in August because that is the time of the year when a newly harvested crop of rice is available and it tastes the best!
Personally, I suggest that you learn how to make ”miso soup.” Japanese people usually eat it. ”Miso soup” also goes exceptionally well with ”sushi.”
